Allons Mange': Boudin Sushi, Gator Head Sinks, and a whole Lot of Cajun Heart

Traveling with Terin teamed up with Cajun TikTok Creator Cory Ledoux for a foodie collab, and what better spot to meet up than Allons Mange' in Crowley, Louisiana-a restaurant that serves boudin sushi and even has gator head sinks.

When you walk into Allons Mange', you can tell it's not your typical Cajun Restaurant. Owners Audie Hanks and Mikey Stutes made sure every corner has a Louisiana touch. Audie himself welcomed us in and gave us a tour, pointing out the artwork and the stories behind it. On one wall, the Ten Commandments and "In God We Trust" are displayed with the American Flag. Another wall is dedicated to veterans, including a heartfelt tribute to Audie's grandfather, Ernie Hanks, who was killed in action in Germany in 1945. The walls aren't just decoration-they're part of the restaurant's soul.

A Menu with a Cajun Twist

The menu at Allons Mange' is as bold as its decor. Of course we had to try the Boudin Sushi. It was delicious as it was unique, with crispy textures and a sweet kick from the pepper jelly drizzle on top.


Next came the Cajun Sampler, which gave us pork wings, swamp nuggets, and crawfish hushpuppies. Every bite felt like a taste of Acadiana.

For mains, I went with the Cajun Fettuccine which consisted of shrimp and tasso over penne pasta, creamy and full of flavor. Cory couldn't resist the Wagyu burger which came out stacked and juicy, served with a side of perfectly fried okra.


And dessert? Let's just say we didn't leave hungry. I had the rich Chocolate Ganache Brownie Cheesecake, while Cory went with for the Cinnamon roll Peach Cobbler.


Family, Flavor, and Community

The heart of Allons Mange' shines through in its people. Audie's daughter Kailey shared their story with us:


"We are family owned and operated by Crowley natives. My Dad had a dream of opening a restaurant and he made it into a reality. We wanted to bring something to our community that's close to home. We love to cook, we love unique dishes-things that are packed with flavor and twists. Think sweet, salty, and savory. Beyond that, our bar menu is created in-house, with rotational seasonal menus full of creative flair. This place is a labor of love. Truly, something that brings heart to home.

That statement couldn't be truer. From the gator head sinks to the bold Cajun flavors, Allons Mange' is one of those restaurants where food and culture come together to create something memorable.
