Holiday Treats from Kasey P: Peanut Butter Balls

It's that time of year again! The holiday season is upon us and nothing reminds me more of this season like making special desserts to share with friends and family. This dessert in particular, reminds me of when I was a kid. My mom and I used to make these for Christmas day and to give as little gifts. I hope you enjoy them as much as I do! Be warned....they are addictive!!


Peanut Butter Balls


Ingredients:

  • 1 1/4 cup of creamy peanut butter

  • 1/4 cup melted unsalted butter

  • 2 cups powdered sugar

  • 1 1/2 cups rice cereal

  • Chocolate candy coating (can be milk, dark, or white chocolate)

Combine the peanut butter, melted butter, powdered sugar, and rice cereal in a big bowl. Mix until combined. Mixture will be very crumbly, but will stay together once squished and rolled into balls. The size of the balls is completely up to you. Once you have all your mixture rolled into balls, pop them into the freezer for about 20 mins so the mixture will be firm enough to dip in the chocolate. Once you pop them out of the freezer, roll them around in the melted chocolate. You can get very creative in this step and you can customize them to your liking. Add sprinkles or drizzle with more chocolate! After they are dry, you can gobble them up or share at your discretion.
